Holiday Happenin' Honey Glazed BBQ Ham
Serves 4
8.5 lb. Smoked Pork Shoulder Ham
16oz Pineapple Juice
2 med large onions (cut in 1/4" rounds)
2 tbsp. minced garlic
2 tsp. minced ginger
1 tbsp. black pepper
1/4 c. pure maple syrup
2 tbsp. spicy brown mustard
1 c. BBQ sauce
1/4 c. honey
Step 1: Preheat oven to 375°
Step 2: Trim any excess fat from ham & make criss-cross cut incisions, approx. 1/2" deep, across surface of ham (it should look like a grid when youre finished). .
Step 3: Rub garlic, ginger & black pepper into slits on ham, then rub maple & mustard mix over top of ham.
Step 4: Put onion rounds and pineapple juice on bottom of roasting pan and place ham directly on top of onions.
Step 5: Place in oven and bake approx. 2 hours.
Step 6: Remove ham from pan, Take onions and chop em, mixing with pineapple juice and drippings from bottom of pan. Mix BBQ sauce and honey into mixture. Spread over top of ham and bake for another 25 minutes.
Now thats what I call cooking for the holidays!
