I found this in a newspaper last week and made it....it was yummy.
1/2 cup cooked brown rice
1 11-ounce can sweet corn, drained
1 14 1/2 ounce can stewed tomatos
1 4 ounce can green chillies, diced
1 16-ounce can pinto beans, drained
1/2 green pepper and 1/2 red peper chopped
1 garlic clove (I just used some garlic powder)
1/2 med onion, chopped
1 stalk celery, chopped
1/2 pound COOKED ground beef
2 TBPS of chili powder
Tabasco to taste (optional)
Shredded cheese
Sour cream (optional) but good with it!
Preheat oven to 350 degrees. Mix all ingredients, except cheese and sour cream, and put in 9X13inch casserole dish. Top with cheese. Bake about 10 minutes or until chees is melted. When serving, top with sour cream. Note: vegetables will be crunchy.
(Optional: try adding 1 1/2 teaspoons of cumin as you brown the ground beef; also if you'd like saute vegetables before adding to mixture.)
