Roast Beef

I tried a new way to cook roast beef last night. It turned out perfectly.

1 eye of round roast 3lbs
seasoning rub of your choice.

Preheat oven to 500. Place roast in roaster or as I did, a cast iron skillet. Cook 7 mins. per pound for medium rare. Don't open the oven door, turn oven off and let sit for 2 hours. It was perfection! I made gravy out of the drippings and served with a salad and rice. I will never cook roast any other way again.

It really works and since you are not cooking for very long at a high temp, it gets a yummy crust and the middle stays a nice medium rare

That sounds interesting. I love roast beef. I have never cooked anything at that high a heat either. Interesting enough to try though.
