Potato Chip Chicken

This recipe is sooo good. I haven't served it to anyone who didn't like it.


garlic
potato chips
olive oil

Preheat oven to 350 degrees

Dice 2 or 3 cloves of garlic, more or less to your preference and put them in a microwave safe bowl with a stick of butter or margarine. Micro until butter is melted. Remove from micro and let a bit.

Crush or food process potato chips until they are fine. This won't work as well if the pieces are too big. I usually just start with a few handfuls and see where that gets me so i don't waste chips.

Dip your thawed en breasts in the butter mixture and then roll in the potato chips until covered.

Heat a couple tablespoons of olive oil in a skillet and place the en in and fry until golden.

Place en in a oven dish and cook at 350 about 30-40 minutes or until juices run clear.

I usually serve with mashed potatoes and gravy. yummy
