Pineapple Turkey

Pineapple Turkey

5 pound turkey breast
1 pineapple
½ cup dry white wine
2 tablespoons honey
2 tablespoons soy sauce
½ teaspoon ground ginger
1 large garlic clove, finely chopped

Place turkey breast, skin side up, on a rack in a shallow roasting pan. Insert a meat thermometer so that its tip is in the thickest part of the meat and does not touch bone. Roast uncovered in 325F oven for 1 hour.

Pare the pineapple, then cut it lengthwise into halves. Remove the core, then cut each half crosswise into 8 slices.

Mix the wine, honey, soy sauce, ginger, and garlic in a small bowl. Arrange the pineapple on the rack around the turkey. Brush the turkey and the pineapple with the wine mixture. Roast uncovered, frequently brushing the turkey and the pineapple with the wine mixture, until the thermometer reads 185F, about an hour. Remove pan from the oven, and keep warm until serving. Serves 5 to 10, depending on how hungry they are.
