Gingered Ham

Gingered Ham

2 lb. fully cooked ham slice, 1-inch thick
1 C. ginger ale
1 t. finely chopped ginger or
½ t. ground ginger
2 green onions (with tops), chopped
2 t. cornstarch
Green Onion Tassels (below)

Slash the outer edge of fat of the ham diagonally at 1 inch intervals and place in a 11x7x2 (or there-about) baking pan. Mix the ginger ale, ginger, and green onions and pour the mixture over the ham. Cover and refrigerate for at least 4 hours, turning the ham 2 or 3 times.

Drain the marinade from the ham and reserve it. Bake the ham uncovered in a 350F oven for 30 minutes. Brush the ham with the marinade and bake it for another 15 minutes. Mix the rest of the marinade with the cornstarch in a pan and bring to a boil, stirring constantly. Boil and stir for 1 minute. Garnish the ham with the Green Onion Tassels and serve with the sauce.

Green Onion Tassels

Trim the root and most of the top from some green onions, leaving the white and some of the green, to about 4 inches. Slit the ends about 4 times, more or less, almost to the center. Place in iced water until chilled, then drain and serve.
