Fish Sticks

FISH STICKS

Yield: 8 servings (2 sticks each)
Source: "Forbidden Foods Diabetic Cooking"

INGREDIENTS

- 1 tablespoon canola oil
- 1 egg
- 2/3 cup instant potato flakes
- 2 pounds firm white fish fillets, such as pollack, cod,
or haddock, cut into 16 (4-inch) long, 1/2-inch-wide strips
- Pinch seasoned salt
- Pinch cayenne pepper

DIRECTIONS

Preheat the oven to 400 degrees F.

Grease a baking sheet with the oil. Beat the egg in a small
shallow bowl, and pour the potato flakes in a pie plate or
shallow bowl. One at a time, dip the fish fillets in the egg
mixture, then dredge in the potato flakes, pressing with your
fingers to the flakes adhere. Place the fish on the
prepared baking sheet.

Sprinkle the fish with the seasoned salt and cayenne pepper.
Bake, turning once, until puffy and golden, 20 to 25 minutes.

Calories: 126, Fat: 3 g, Cholesterol: 75 mg, Sodium: 78 mg,
Carbohydrate: 3 g, Dietary Fiber: 0 g, Sugars: 0 g, Protein: 21g
Diabetic Exchanges: 3 Very Lean Meat

Hi Crazeemama!!! Same here -- soooooo tired of en and I'm not even the diabetic one LOL!!! My mom lives with me and hubby and son -- she's the diabetic -- and not a very good one LOL. Her attitude towards the diabetes is poor -- I can't blame her in a way but then again ... it's important to control it. She has never been one for change and I always hear the phrases "I grew up eating a certain way and now everything has changed ... I don't do change!" or my personal favorite -- "I don't eat that ... I'm a purist!" Whatever that means !!!

Anyway, I signed up for an online ezine that sends me a diabetic meal every day in the form of an e-mail. Have you signed up for things like that???? I've only been posting the ones I thought sounded good :D If you're interested, I can send you information on signing up for the ezine -- no pressure though ... just trying to .

Mechele, I would love it if you would send me the link..dh was diagnosed in January of this year.. it is hard to change everything and we don't always do a great job, but we are trying to do better..

Donna915 -- no problem at all. I know it's tough to make changes -- hard to say goodbye to those foods you love but should no longer indulge in -- that's why I started searching out these recipe sites --- funny but it didn't get my mom to change her mind. Now I just make things but make little changes and just never tell her -- sneaky -- but it's the only way I can get things done and all she's doing is killing herself by not taking care of herself.

Thank you.. I came in to work today and there was a flier here about a cooking cl*** for people with diabetes and their families.. I thought that was funny since we were just talking about it before I came in. Our cooperative extension service is giving it. I am signing up. It is $12.00 for 3 two hour cl***es. I will post any tips and recipes that I get after I take it. It will start in September.

Hey, didn't even see this post until now.. Sorry.. I was just getting ready to post some of the recipes. We did desserts this past week.. I am not much in to the artificial sweet stuff, so I didn't really like much, except for the pumpkin dish, and it tasted the same as the full sugar version to me. I am looking forward to this weeks cla.ss we are doing main . Next week will be side . One thing that I did not know that I will p*** along was that when you combine sweet n low and equal it is twice as sweet and you only have to use half as much.. The DOWN side was that she made tea with the two and I did not like it at all.. you could taste the aftertaste.. thumbsdown

That's a shame ... I thought that Splenda was pretty good ... I've been trying to cook with it; however, mom and I have been attending a Living with Diabetes cl*** through her doctor's office. The dietician has stated emphatically that sugar intake is NOT the issue. The issue and what should be closely watched is the carbohydrate intake!!! She suggested that someone wishing to lose weight should have no more than 45 carbs per meal and if you are a snacker then have less at meal time and then the balance for a snack. That knowledge has really ed my mom begin making changes in her eating regimen which is amazing!!! The main reason for that is because she can continue to have the foods she likes but it teaches moderation because she can only have so many carbs -- much like weight watchers points program!!! What is your cl*** teaching ... carbs or sugar???

Shellduck.. I have a dip recipe at home that I will try and post soon.. I will look for some more too.

Iluv.. we are counting carbs too.. When dh and I took the cl*** with the dietitian she told us that carbs, sugars and glucose was the same thing.. but yes I do look for the carbs on products when I shop.. They have taught us that One serving is 15 carbs on most things.. then he is supposed to use the food pyramid for his servings. I know one big thing was serving size. It is not very big. dh is not a small man.. It is a major adjustment.. We are still not doing as well as we should or even as well as we did when he first found out he was diabetic.. but we try.. :D I only had time to post the one recipe for the desserts.. I will try and post the rest soon and tomorrow I will get some entree recipes that I HOPE are going to be really good.. keep your fingers crossed.. ..

Shell -- I'll do some searching and see what I come up with.

Donna -- sounds like we're getting the same training Glad to know we're on the same page LOL. Listen ... it's all a matter of getting used to different things and retraining yourself -- it's really hard and I know because I'm going through it too -- so we're both in the same boat!!! Great company ... if I do say so myself!!!!!
