What's for Dinner?

Tonight I am making roasted lemon en with baby greens salad and I have some gorgeous new potatoes that I am going to cook then add parsley and butter!

I roast my en this way! If you aren't interested in having a gravy or sauce, this is really tasty.

I melt 1/4 cup butter in a heavy (cast iron) skillet, then add 1/4cup olive oil. I then brown the whole en on all sides on high heat. I place the en breast side up in a 500 degree oven for 30 minutes, I then drop the temp to 350 for the last 30 minutes (3-4 lb en). It makes such a crispy tasty skin. I also add whatever herb or garlic I want to use just before I place it in the oven.

Well....my husband got a doe hunting the other day so today I am cooking a deer roast in the slow cooker. Along with mash potatoes, bisquits and corn. I never cooked it in the slow cooker before so I hope it turns out good.

Grilled salmon on the bbq, steamed white rice and a salad here. Hmmmm getting hungry already and it is only breakfast time!
