2 cups all - purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon sugar
1/2 cup unsalted butter, chilled, cut up
3/4 cup half - and - half
1 cup grated Monterey Jack cheese with jalapeno peppers
Heat oven to 425 degrees F. Line baking sheet with parchment paper. In large bowl, sift together flour, baking powder, salt and sugar. With pastry blender or two knives, cut butter into flour mixture until mixture resembles coarse crumbs.
Add half - and - half to butter mixture; mix well. Stir in cheese. On lightly floured surface, knead dough 30 seconds. Pat into 1 - inch - thick disk. Cut into rounds with 2 - inch round biscuit or

cutter. Place on baking sheet.
Bake 15 minutes or until rounds are puffed and golden. Cool on wire rack.
