TOPPINGS:
1/2 cup packed brown sugar
1/2 cup chopped pecans
2 Tablespoons butter or margarine, softened
Combine the first four ingredients until crumbly; press into a
greased 13"x9" baking pan. Bake at 350 degrees for 20 minutes
or until golden brown. Meanwhile, beat filling ingredients in a
mixing bowl until smooth; pour over crust. Bake for 45 minutes.
Combine brown sugar, pecans, and butter; sprinkle over top.
Bake 15-20 minutes longer or until knife inserted near center
comes out clean. Cool. Cut into squares. Store in refrigerator.
Thanks ME-Dawn - I usually make pumpkin cupcakes to send Jason for his birthday but I just may make these instead. They'd be much easier to pack, less likely to crumble during shipping and since he loves oatmeal he's sure to love these tasty treats. I figure it's enough Halloween time that it'll be safe to mail them. Should we have warmer temps I'll just have to them there myself :D ( I was thinking of going to Vermont again for his b-day anyway, depending on his work schedule)
