Makes 6 dozen
You can substitute raisins for the dates or walnuts for the pecans.
1 1/4 cups butter flavored shortening
1 cup white sugar
2/3 cup packed brown sugar
1/4 cup honey
1 egg
1/4 cup milk
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup quick cooking oats
1 cup flaked coconut
1 cup dates, pitted and chopped
1 cup chopped pecans
1 Preheat oven to 350 degrees F (175 degrees C).
2 In a medium bowl, cream together the shortening, white sugar, brown sugar and honey until light and fluffy. Stir in the milk and vanilla. Sift together the flour, baking soda and salt, stir into the creamed mixture. Then stir in the coconut, oats, dates and pecans.
3 Drop dough by rounded teaspoons onto unprepared
sheets. Bake for 11 to 12 minutes for soft
