Easy Drop Sugar Cookies makes about 4 dozen
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
2 large eggs
3/4 cup sugar, plus additional sugar for topping
2/3 cup vegetable oil
2 tsp. vanilla extract
1 tsp. grated lemon zest (optional)
1) Mix flour, baking powder and salt in medium bowl.
2) Whisk eggs in large bowl until frothy. Add sugar, oil,
vanilla and lemon zest (if using) and blend well. Stir
dry ingredients into egg mixture until blended. Chill,
covered for at least 30 minutes.
3) Preheat oven to 400 degrees F.
4) Drop

dough by rounded teaspoonsful 2" apart
onto ungreased baking sheets. Wet the bottom of a flat
bottomed glass with water and dip in additional sugar.
Press the top of each

lightly with the glass to
flatten, wetting glass and dipping in sugar before
pressing each

.
5) Bake

s until lightly browned, about 8 minutes.
Cool on baking sheets for 2 minutes. Remove to wire
racks to

completely. Store in airtight container
or freeze for future use.
