Gingerbread
Makes 8 servings.
Preparation time: 15 minutes.
Cooking time: 1 hour.
Standing time: 20 minutes.
• ½ cup butter, at room temperature
• ½ cup sugar
• 1 egg, beaten
• ½ cup molasses
• ½ cup honey
• 1 teaspoon fresh grated, peeled ginger
• 1 cup hot water
• 2 ½ cups flour, sifted
• 1 ½ teaspoons baking soda
• 1 teaspoon ground cinnamon
• 1 ½ teaspoons ground ginger
• whipped cream
Preheat the oven to 350 degrees Fahrenheit and grease a 9- by 9-inch cake pan. Cream together the butter and sugar, add the egg and beat until smooth. Add the molasses, honey, grated ginger, and 1 cup of hot water and beat until smooth. In a separate bowl, combine the flour, baking soda, cinnamon, and both gingers. Stir the flour mixture into the liquid until well-mixed, pour into the pan and bake for 1 hour. Let
