Christmas Cookies

Do you bake Christmas s? I've tried the last few years to bake a lot of them and freeze them.

What are your favorites? We can start a thread of our favorites to share and try.........


Here's one.......yummmmmy!!

Fry-Pan Cookies

If the mixture is sticky, lightly coat the scoop with nonstick cooking s or dip it in water between sc.

1 Tbsp butter or margarine
1/2 cup sugar
2 eggs, beaten
1 1/2 cups chopped pitted dates
1 teas vanilla
2 1/2 cups crisp rice cereal
1/2 cup chopped nuts
3 cups flaked cocont

Melt the butter or margarine in a large skillet over low heat. Stir together the sugar and the eggs. Add to skillet along with dates and vanilla. Cook and stir over low heat about 5 minutes or till thick. Remove from heat; stir in cereal and nuts.

Place coconut in a shallow dish. Using a scoop or small ice cream scoop (No. 100 size, about 1 1/4-inch diameter) drop mixture into coconut; roll to coat. Refrigerate till firm. Makes 48.

To Store: Place in layers separated by waxed papaer in an airtight container. Cover; refrigerate up to 1 week. If chilled, let stand 30 minutes at room temperature before serving. I did freeze these and it worked out okay!

Another yummmmy one........

Chocolate Mint Cookies

Makes 42

Tip: Mint candies (Andes candies) add great flavor to these sugar-dusted chocolate s. Chocolate mints will melt slightly after being pressed into warm s but will set upon ing.

2 sticks (1 cup) butter, softened
1 1/2 cups granulated sugar
1/2 cup firmly packed brown suger
1 egg
1 tsp peppermint extract
1 tsp vanilla extract
2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 tsp baking powder
1/2 tsp salt
21 creme de menthe thin candies, unwrapped, cut in half diagonally

1. Position rack in center of oven. Preheat to 350

2. Combine butter, 1 cup of granulated sugar, and the brown sugar in a large mixer bowl. Beat at medium speed, scraping bowl often, 1 to 2 minutes until creamy.

3. Add egg, peppermint extract and vanilla. Continue beating 1 to 2 minutes until well mixed. Reduce speed to low; add flour, cocoa, baking powder, and salt. Beat 1 to 2 minutes until well blended.

4. Shape dough into 1-inch balls; roll in remaining granulated sugar to coat. Place 2 in. apart on ungreased sheets.

5. Bake 10 to 13 minutes until s are set. Immediately press mint half into center of each . Let stand 2 minutes; remove from sheets. Let completely.

Christmas Cookies

My favorite Christmas isn't really a but Rosettes . These are fried and dusted w/powdered sugar.
Later sometime I'll post the recipe, you use a timble to dip in the batter & fry it off the timble. YUMMY
