Chili Pizza
1 lb ground beef
1 package chili seasoning mix
1 14.5 oz can stewed tomotoes, diced
1 14.5 oz can kidney or pinto beans, undrained
8 large (Burrito sized) flour or whaet tortillas
2 cups shredded cheddar
1 40 can black olives, drained & sliced
Preheat oven to 400 degrees.
Brown ground beef, drain.
Stir in seasoning mix, tomatoes & beans, cook 5 mins.
Arrange tortillas in a circle on 12" pizza pan, overlapping as neccessary.
FOR CRISPIER CRUST, pop tortillas in oven for 5- 10 mins. FOR CHEWY CRUST, omit that step.
Spoon ground beef mixture on to tortillas & top with cheddar & olives. Bake 10-15 mins until cheese is melted.
THIS IS MESSY, but YUM YUM!!!!!!!!!!!!!!

Tonight is nothing special we are having spaghetti, as we are going to look for another car. I dont want another car payment we just paid this one off.

Today I had my crock pot going with New Orleans Red Bean and some lean ham cooking in there. It smells so good t walk in the door and know all I have to do now is cook the rice and cornbread!

Lindaann....are you talking red beans and rice? If so, can you tell me how to make it....I had it once, years ago in Texas and loved it, but haven't been able to ever find a recipe.
I don't know yet what we are having....hmm guess I should go look in the freezer.......
Maybe just the chili pizza....it sounds yummy!!

Nicole has a big Blast Party at school tonight as a reward for selling in the fundraiser. We are just going to grab Salads for us and maybe meatballs for ally and Ill fix her a mixed veggie to go with.

Mmmmm Countrymama, I want to go out to eat with u, that is one of my favorite restraunts (for a buffet) Old Country Buffet, is 40 mins away from our house.
Today, we are having grilled ham and Cheese sand. on a hogie bun......and Steak fries.
I ate dinner at my Mom's house tonight. Spaghetti with Swedish Meatballs. It was yummy. She hosted a Wedding Shower today too, so she had a lot of left over goodies. The Strawberry Cake was soo yummy. She sent a lot of fruits, veggies, s, cakes, en ball and crackers and such home with me too! Thanks Mommy!
