Due to company visiting, I took the day off from Atkins. I had a Reuben with fries for dinner at a local restaurant followed by homemade gelato (2 sc) at a new ice cream shop that just opened in Staunton, VA called The Split Banana. This place makes homemade ice cream, sorbet, and gelato on site. It is delicious and they allow you all the free samples that you need in order to decide what it is you are having. The flavor selection is constantly changing depending on the availability of ingredients. The prices seem reasonable and they do take Credit Cards, too.
Tomorrow it is back to phase one of Atkins until at least mid-April when I go visit my brother for his birthday.

My friend and her sons chose to stay an extra day, so tonight we are going to KFC for their all-you-can-eat buffet! As long as I peel off the skin, I can eat all of the en that I want there and still stay on my diet, while the kids can get their fill of everything else. Depending on what is actually on the buffet tonight, I may just decide to eat what I want and re-start the diet again tomorrow. I have been back on it all day today, but I do have a real weakness for a lot of their side (sweet potatoes/ Broccoli, rice and cheese/cole slaw. etc).

Well, I ate a lot of small ings of the sides that I like - yams, broccoli, rice & cheese, cole slaw. I did stay away from the scalloped potatoes.
Because I have not been monitoring my liquid intake for the last several days, I ended up spending a lot of time in the room tonight - and I am not real hungry either. So, tonight my dinner seems to have been water - lots of water!!

I will definitely be making sure to drink plenty of liquid from here on out while I am on Atkins.

Well ladies,

I have managed to cook dinner 4 of the past 6 nights. Tonight I taught my DD how to make meat loaf - she hated mixing it with her hands as it was too messy for her . With the meat loaf we had california blend and macaroni and cheese.

Sunday I made a roast chic-ken with crescent rounds and california blend and corn niblets. Monday I made a salmon-veggie quiche. Tuesday DH cooked me dinner as it was our 15th anniversary. Wednesday night I made a pork roast, broccoli and perogies. Thursday I treated the family to Subway subs - on sale now foot longs for $5.

My family expressed the fact that missed my home cooked meals, so I am trying to cook dinner more often for them. I swear I used to have more time to do this when I worked full time for someone else than I do now that I work for myself.

Needless to say, these meals are not completely Atkins friendly. Right now, I am trying to eat 2 high protien meals (breakfast and lunch) each day and limit the carbs that I eat at the dinner. We will see if I can still drop weight (though it will be much slower) while doing this, or if I have to go back to phase 1 of Atkins to keep losing the weight that I need to drop.

Well Ladies, after cooking so much the other week, my DD has asked me not to cook dinner! It is not that she and the DH don't like my cooking - they love it! - it is just that she is the one doing the , and when I cook that dirties a lot more for her to do every night.

Actually, this week has been busy for me again. It sure will be nice when I finally get paid for all of this work I have been doing for my clients. Right now it seems like the tax men (Fed and State) are getting it all. It is not that I mind paying my taxes so much (I like using the interstate, having police-fire-rescue, and a wonderful military to protect our country ), I just wish it didn't all have to come out at one time. Being self-employed, my 2nd qtr is due the same day as what I still owe from last year. And, 2 months later, I need to have the next qtr's payment in the bank to send it off to the tax men. It just seems like it is all due at once for me this year.

Maybe next week I will be cooking for the family again. It sure is cheaper and healthier for everyone than the preprocessed stuff the DD and DH eat when I don't cook for the family.
