I just started some beef brats, should be ready in about 10 mins. As the holidays get closer, it is getting harder to stay on my diet, but I am now down 25 pounds, so I keep on keeping on and denying myself the fun stuff until Christmas - when I will have a lot of forbidden stuff - chocolate, mashed potatoes, breaded pork chops, peas, IF Coffee, popcorn, etc. Until then I will be good and stay away from all of those processed carbs and continue to marvel at the return of my cheekbones in pictures and the absence of the double/triple chin in the same pictures. It has been a long 3 months, but I have made a lot of progress. I still have between 33 and 43 pounds to go until I hit that goal weight, but I am certainly feeling a lot better without the extra weight - more energy and less back pain.

Last night I made a pork roast, some nuked broccoli and cauliflower, reworked mashed potatoes, and biscuits (by Pillsbury). It was pretty good and at least the family could all eat together.

Tonight I had about 1/3 pound of thin sliced salami with 20 oz of water. Went to a 4:25 showing of a movie and didn't get back home until 7 p.m. Had a late breakfast and lunch today and wasn't that hungry for dinner.

Haven't figured out what we are having tomorrow night yet. I am sure that I will think of something quick and easy to make.

For lunch I had a salbury Steak TV dinner . It was not bad. It is a michelin or something like that.. they give you meat and potatoes.. Not bad for a fast lunch.

After being off my diet since Christmas Eve (so much for good intentions), I have tried - not succeeded because I had to have chocolate mid-afternoon and over indulged - to get back in the swing of being back on my diet.
Breakfast was meat and eggs,
Lunch was roast beef wrapped aroung Mozzerella cheese and nuked to melt the cheese,
Dinner was 3 hamburger patties topped with swiss cheese.

Maybe tomorrow I will not cheat. After all, I do need to lose what I put on over the holidays.

I got a little weird tonight. My oldest is PMS'ing and she was craving Taco Bell but I could not afford it. So....I crumbled and cooked up some hamburger and added taco seasoning. I layered a row of American cheese in the bottom of a square baking dish, put the hamburger (all cooked and seasoned) on top, then another layer of cheese then topped with biscuits and baked. I have NO what to call it, maybe PMS day dish! It was good and did the trick.
