Tonight we had a modified version of the Pesto Chicken recipe that was featured at our local Martin's grocery store this week. The main change was a substitution of mozzarella cheese for the feta that the orignal called for because my family is not a big fan of feta. I also browned the en and garlic in olive oil instead of the vegatable oil recommended in the recipe. Then once I had the pasta and sauce both made, I combined them in a 9X13 pan, sprinkled the cheese on top and baked for 15 minutes in a 250 degree oven to melt the cheese.
It came out pretty good, but it took a lot of pans and work to prepare. We may end up having it again, but it won't be soon. I am just glad that I am no longer the one who does the in this family.
tonight we had a big tossed salad. We had every thing in it but the kitchen sink.
We had tomatoes ,cheese, dill pickle, onion, brocilli, cauliflower, carrot, and lettuce, and italian salad dressing. It is very good. If anyone is still hungry we have some left over spaghetti we can warm up.
I don't think I could have finsihed my salad if I did add the kitchen sink. LOL
I went over and played a game called 6 dice. With my Mom and my brother. Brittany went too. We had a drumstick ice cream cone while we were over there./ So that was a good snack.
Chickie sounds like a nice dinner. I love potato salad, I don't make it often, but I really like it.Cherries, . Yummy. Burgers ( My son-in-laws favorite.)
Today I had a homeade egg McMuffin. it was good. That was breakfast. I have to get around and have some lunch.
We were naughty. Since our air conditioner is broke and it was about a million degrees in the house when I got home, I corraled the kids and we went to go see "Nacho Libre". We had nachos and lots of buttery movie theatre popcorn and loads of cherry coke! We were so naughty!! But the air condition in the theatre was heavenly and when we got home just a little while ago, the house was ing down as the sun has gone to bed!
