Today I had to rush next door, My Mom fell down, her legs just give out. My brother could not pick her up alone, So I ran over and ed. She said her back hurts, probably ed it on the way down.
I ended up grabbing a handful of trail mix over there. Not sure what lunch will be . Maybe eggs, and toast, I will have to think about it.

Nancy hope your Mom is OK!

I made a new casserole form the Kraft Food & Family magazine. It is called Fiesta Layered casserole. It calls for ground beef, but I use the vegetarian substitute. It is so delicious!!! yum

Talking Layered Fiesta Casserole

Let me post from memory here:

Layered Fiesta Casserole

Take 1 lb ground beef & brown it in a dutch oven with a red & green pepper, chopped. Add 10 oz package frozen corn (defrosted), 1 (15 oz) can diced tomatoes and a 16 oz jar salsa. Bring just to a boil. Turn off heat.

Take 1 cup of this mix and spread it on the bottom of a 13x9" dish. Take 6 TACO SIZE flour tortillas and layer in pan, overlapping as needed.

Put 1/2 of the meat mixture on top, follow with 3/4 c cheddar cheese. Cover this with tortilla layer, then meat, then another 3/4 c cheddar. Cover dish with foil & bake at 350 for 30 minutes.
Uncover, add another 3/4 c cheddar and allow it to melt.
Serves 6.

I had another busy day today. After everything else that was scheduled, we had to make a stop by the store for more juice and my DH's soda. Arrived home late, and decided that we needed to fend for ourselves again tonight.

The DH made himself some pizza rolls, I'm not sure what the DD fixed for herself. I had the rest of a piece of en left over from the lunch I bought today at a place that will probably end up being my February restaurant review. I sure am glad that is now only a monthly responsibility.

We had chop suey for supper . It was made with all kinds of vegtables ( chineese. and with en. We had it over rice. It was good. I have not had it for a long long time

Thanks for asking about my mom. She is ok I guess just has a back ache. She is lucky not have a lot more. She has been having her legs go out all of sudden and then she falls.
she needs to new hip joints, but at her age the Dr are not sure they want to operate. Since she can walk now. they are playing the wait and see game.

Last night we went Chinese. Angela, I and my brother and My Mom. We had a nice dinnner. I went and made my Mom's plate, she is worn out just walking into the resturant. I ate a boddle of crab legs. yummy.

DH took me to Breakfast this a.m. while Duncan was at Preschool. I had a Greek Omelette (feta, spinach & black olives) with rye toast & home fires.
I usually eat like an energy bar for B-fast! So I was STUFFED! all day!

For dinner? Probably some soup!!!!

Tried to post yeaterday, but kept getting ed back to the list of threads/topics after a few seconds.

Nancy, I am very releived to here that your Mom is doing better. Doctors can be so difficult when it comes to trying to get them to improve a person's quality of life. But, I think that is because of all of the lawyers and insurance companies who place a lot of needless restrictions - and the fear of legal action if they aren't followed - that is the real problem that is preventing them from ing patients thes days.

We fended for ourselves tonight. That is becoming the norm lately with everyone's schedules being so full. I miss sitting down for dinner as a family, and next week will be worse than this week was.

At least we should get a bit of a break in our schedules in the new year, as my DH will only be taking one class next semester. At least then we will be able to spend more time together.

Thankfully, we are all planning to be home tomorrow. DH is even off for the afternoon - to work on his term paper. Since we are going to be here, I will be able to have that family meal that I have been missing.

Since the weather has returned to Fall temperatures, I guess it is time to get out the crockpot and find some good recipes to use. That will at least provide some variety to our winter menu.

We went to a new Chinese buffet, It was called fortune Buffet. It was pretty good. they have the person who cooks your food, like a stir fry and uses different sauce. I had Garlic sauce. They had crab legs, and most of the regular . We liked it, but still like our orginal place Hong Kong buffet. But we will go again. It was nice.
