1/4 tsp salt & 1/4 tsp black pepper
4 (6 0z) skinless salmon fillets, about 1" thick

2 cups cherry tomatoes, halved
1/2 cup finely chopped zucchini
2 TBSP capers, undrained
1 TBSP olive oil
1 (2 1/2 oz) can ripe black olives, sliced kind, drained
Preheat oven to 425.
Sprinkle salt & pepper on salmon, both sides. Place fish in a single layer in 11x17" baking dish, coated with s

Combine tomatoes with remaining ingredients in a bowl; spoon mixture over fish.
Bake 22-25 mins or until flakes with a fork(Ovens vary).

2 tsp olive oil
2 tsp minced garlic
2 (6 0z) bags fresh baby spinach
1/4 tsp salt
Heat oil in skillet over medium heat.
Add garlic, saute 2 mins, stirring constantly.
Add 1/2 spinach, cook 1 min, stirring frequently.Add remaining spinach, cook 5 mins, stirring frequently. Stir in salt.
