Tonight I think we'll have round steak, simmered all day (if I get my butt on gear), with mushroom gravy, mashed potatoes, salads for those that want one, and either corn or green beans, and dinner rolls

Wow Becky that sounds yummy!!!. Bet your family enjoyed that one. I had a big tossed salad for dinner, and then about 10:30 PM. I ended up making me some ramen noodles. Not very interesting diner here. Not sure what today holds yet[/color]
I finally made it to one of the local farm stands (only open until the end of October) and purchased a beautiful eggplant. Small enough not to be bitter, big enough to feed 3 people.
I made a recipe from [u]Best Recipes from the backs of boxes, bottles, cans and jars[u] called Baked Eggplant Napoli. The recipe only had one flaw, it called for too much salt in the sauce. If anyone has the book and tries the recipe, I suggest only using 1/2 tsp of salt. I have altered the recipe in my book so if I make it again, it won't be too salty.
Other than the saltiness, the family liked it.
Tomorrow, I am making up some fried eggplant from the remains as a light lunch for my DD and myself. She has 2 parties to attend tomorrow afternoon. So, she will have access to a lot of junk food. I figure if she eats a healthy lunch before going, she may not eat a lot of the other stuff. It is worth a shot, anyway.
Not sure what lunch is going to be. Amy just made some Zuchinni bread, with splenda. It sure smells good, guess we will have some for lunch. Not sure what else we will have. Maybe a salad.
Tonght the DH was on his own and still hasn't eaten dinner - I figure that he had a late lunch or something. The DD had 2 parties this afternoon. At the earlier one I purchased a medium pizza which she wasn't interested in, because we had a big lunch and she wanted to play more than eat. At the second party, dinner was provided for her as a "build your own sub/sandwich" and they served lots of other things. too. She came home full. So, I ate what was left of the pizza for dinner.
I have just completed the 2nd full day of veggie eating, and I gave up over the Labor Day weekend. The veggie thing was not planned, but has been surprisingly easy. I still eat eggs and use dairy products, just haven't had meat in 2 days. This means that the pre-packaged, over-processed food has been minimal, too. My DD is still planning to try to eat less meat, but tonight she fixed herself a chic-ken sandwich, because the options were limited at the party she attended. I find that eating beans and more fruits and veggies is something that seems to agree with my body. So, while I will probably also be cutting back on my meat consumption, I am still a dedicated omnivore.
we ended up going out to eat. We went to Old country buffet. Amy and her boy friend and Brittany took me out to diner. I had shrimp, ham, en, and some clam chowder.After I ate I had some bread pudding.
Well, for lunch I ate a ham and cheese hot pocket - so, the vegetarian run has finally been broken,
I was going to make something with chic-ken tonight, but our Adrian Empire er practice ran the full 3 hours and it was after 4 by the time I got out of the shower afterwards, so we are fending for ourselves tonight. I promised my family I would cook a full meal for tomorrow's dinner though.

Have you tried the ready to eat marinated tuna filets in the foil package? they are very good. I am having one tonight with rice, Duncan will have fish sticks.
I am a vegetarain but I still eat fish sometimes

We went to the Bacholoretter party for Angela last night. We had supper there. We had deviled eggs, little wennies in BBQ sauce, a nacho dip and chips. , Ham roll ups. potato chips and dip, some hot wings, ( which were super hot) We also had some celery with peanut butter. and some cup cakes shapped like a mans body part. and we had jello shots, and of course some mixed drinks.
Bruinsmama, I have tried the foil pouch salmon and used it in quiche. Haven't tried the marinated tuna, yet. Maybe I will give it a try the next time I have a coupon for it. I still prefer my seafood to be freshly caught, but that is difficult to have since I left the coast for the mountains.
Tonight I am serving one of my stove top casseroles. This one is diced chic-ken, cheddar cheese, broccoli, and pasta shells. It should taste good and it is definitely quick and easy to make.
Tonight I made a bisquit wrapped chi cken and cheese with a homemade cheese sauce, mashed taters and broccolli and cheese. It was very yummy.
