Changed my mind on dinner - was outlining a book I'm using for home schooling this Summer and lost all track of the time.
Opted to create something new using a variety of spices, ground beef, onion, tomatoes, rice and parmasean/romano cheese. Also threw in about 1/4 cup of beer for added flavor. We are having crescent rolls with it. I'll let you know if it is any good after we eat it.
Everyone had 2nds on the thing I made and they said it was good. Wish I could post the recipe, but it was something I just threw together adding spices until it smelled good.
I am making the two younger ones fish sticks. My oldest (HEART ATTACK) is at the movies with her friend. I am trying not to panic over it. I don't think I will be eating. I have a head-ache!

We had BLT's I bought at the little restaurant in town. They make great blt's at a good price. I made my DH a burger on the George Forman grill.He loves those things.

Let's see, I browned about a pound of ground beef in EVOO along with a small, diced onion, adding some taco seasoning, thyme, ground mustard, oregano, garlic, basil, salt and pepper. I then added a can of whole peeled tomatos (cut up) and a pinch of sugar. Oh, and I added about 1/4 - 1/2 cup of beer to this mixture for a bit of added flavor. Then I turned the heat down and allowed it to simmer until my rice was done. Before I started this cooking I started to make about 3 cups (cooked so I started with 1 1/2 cups) rice. Once the rice was cooked I stirred it into the other mixture and put a lid on it and let it sit on the table for about 5 minutes before serving. This allowed the rice to absorb some of the flavor from the beef, tomato and spice mixture.
At least I think that is everything I put into it as far as the spices are concerned. I don't have any how much of what spice I added.
That is the closest that I can come to the recipe. Sorry it is not more exact. The whole thing took a little over 1/2 hour from start of rice to being on the table. So, it is one of those quick and easy throw it together meals that busy Moms need.
i think tonight we're having lasagna rolls. i've been craving these ever since i saw the "everyday italian" episode (w giada). they look heavenly. and i think these will freeze beautifully!! so i'll be making extra for the freezer again!! YAY!!
ladyre, thanks for writing it down! I am going to give it a try! sweetbaboo, I missed that episode! She is one of my favorite chefs! I make her Rigatoni with Bechemel Sauce quite often (as often as I can afford the ingredients!)
We are going to an "un-birthday" party tonight at my brother's house. She is fixing sketti! I made no-bake chocolate oatmeal s to bring along. Hopefully we will have a good time and not have any stress. I could use a no stress time!

tonight we had left overs from yesterdays cookout. I had a hamburger, with evrything, and some cottage cheese, and corn on the cob. Also a little salad. We at up everything but the hot dogs. We had a piece of the raspberry cake for lunch.
We had mexicali casserole tonight. With the cafeteria closed for the Summer my husband appreciates it when I make anything that has leftovers for his lunch the next day or two. Making and eating the same sandwiches gets old rather quickly.
The kids had en and noodles and when my DH finally got home from work he had a can of Campbell's Select Beef with Portobello Mushrooms Soup. Me? I had a glass of lemonade. Not very hungry.
