Chinese Marinated Sweet & Sour Salad
Serves 15 - 18
1 lg. onion, thinly sliced
1 green pepper, sliced
1 can French style green beans
1 can bean sprouts
1 (4 oz.) can mushrooms, sliced
1 can shoe peg corn
1 jar pimento, chopped
1 c. celery, sliced
1 sm. cauliflower, cut in buds
3 med. carrots, shredded
1 c. water chestnuts, sliced
--DRESSING:--
1 1/2 c. vinegar
1 c. salad oil
2 c. sugar
6 tsp. salt
Pepper to taste
Drain all canned ingredients well. Mix all ingredients in large bowl. Prepare dressing, by blending all ingredients together in small bowl. Immediately pour over vegetable mixture, cover and refrigerate.
