Enchilada Casserole

Ingredients

1 lb. ground beef
1 package enchilada sauce mix
1 can refried beans
15 oz. can chunky style tomato sauce
8 oz. can tomato sauce
10 oz. package of 6 inch flour tortillas, with 12 in package
16 oz. package cheddar cheese
Sour cream
Black olives

Directions

Brown beef in a large skillet, and drain. Add the enchilada mix, refried beans, and tomato sauces into the beef. Simmer for 10-15 minutes. Grease a 9x13 baking dish and layer the bottom with six of the tortillas, covering bottom completely. Pour half of the meat mixture over tortillas, then add half of the cheese. Repeat layers, ending with cheese. Bake at 350 for 30-40 minutes. Remove and let sit for about five minutes.

Serve with sour cream and sliced black olives.

For larger families, just double the recipe.

Serves four.

This is a great take-off of the casserole that I make! I have never thought to put in refried beans, and I don't put in tomato sauce in mine, either! Maybe it's time to try a new version?? Thanks for sharing.

I use corn tortillas in mine & I've never used refried beans...I'll have to print this one & try it!

This one sounds yummy. We make a lot of Mexican c***eroles. This one sounds better than the current one we use. May have to try it this week.
