Chicken Casserole
12 ounce bag of egg noodles
2 jars chunky spaghetti sauce
4 chicken breasts, cooked, boned and skinned
8 ounce nonfat ricotta cheese
4 egg whites
8 ounce mozzarella cheese
2 tbsp. parmesan cheese
In a large bowl, combine chicken and spaghetti sauce. In a separate bowl combine ricotta cheese, egg whites and parmesan cheese. Spray a 9x13" pan with nonfat cooking spray. Spread 1/2 of chicken/sauce mixture into the pan. Top with 1/2 mixture of ricotta cheese. Place 1/2 of the noodles on top of this and repeat the layers. Top with mozzarella cheese.
Bake at 350 degrees for 35-40 minutes or until done.
