Mexicali Casserole

Ingredients: about 1 lb of ground beef, half an onion, 1/2 bell pepper (optional), taco seasoning mix, 1/4 cup water, 4 oz frozen corn, 1 can whole peeled tomatoes, about 4 oz tomato sauce, 1 box macaroni and cheese (1/4 cup milk, 1/2 cup margarine as per pkg directions), black olives- sliced or whole (optional), 4 oz sour cream, 7 slices of cheese,

Make mac and cheese per pkg directions. set aside.

Brown ground beef with onion and green pepper over medium heat. Add taco seasoning mix and 1/4 cup of water. Mix well. Turn down heat to low. Add the frozen corn and juice from whole peeled tomatoes. Cut tomatoes from can into bite sized portions and add to mixture. Add tomato sauce. Add black olives. Mix well. Cover and simmer about 15-20 minutes. Stir in the already prepared macaroni and cheese and the sour cream. Mix well. Cover top with the slices of cheese. Replace lid for about 5 minutes - or until cheese melts. Remove from heat and serve with bread. Number this feeds depends on portion size used.

Feel free to experiment with additions of items that your family likes. We use ground beef, however cooked en, ground turkey or other similar substitutes can easily be made. The same is true with the addition of other vegatables than those mentioned. All measurements of ingredients are appoximate.
