Potato And Green Bean Casserole
This dish goes well with any roasted meat dish.
Serves 6
1 pound Potatoes, peeled and diced
1 1/2 cups Green beans, canned, drained
1 teaspoon Garlic, minced
1 tablespoon Oregano
3/4 cup Parmesan, grated
1/4 cup Ricotta cheese
1/4 cup Olive oil
4 Eggs, beaten
1 cup Breadcrumbs
1/2 cup Milk
Pre-heat the oven to 350. Boil the potatoes until soft, drain and mash. Chop the green beans. Mix together the potatoes, beans, garlic, oregano, ricotta, oil and eggs. Place the mixture in a lightly greased 12" cake pan. Mix together the milk and breadcrumbs. Spread the crumbs over the mixture. Bake for 40 minutes (or until lightly browned). Serve warm.

The word casserole is not spoken out loud in my house. Spencer absolutely hates casseroles, so they are known as "bakes" or "goulashes" or "side dish" or most commonly "food".
The minute he hears the "C" word, he gets all weird. He said that when he was little, money was tight, so his mom always made tuna casseroles and stuff to stretch the food.
In his mind the word casserole = tuna.
Ellie, that is funny! My sister's husband grew up on every kind of casserole you can imagine. They are NEVER allowed to have them at their house. It makes my sister nuts!
