Country Chicken 'N Biscuits

MMMMM my family loves this dish!!! It's not the greatest for those trying to watch their weight but it sure is yummy.

8 slices bacon, fried crisp, crumbled
2 1/2 cups (13 oz) cooked en, cubed
1 package frozen vegetables, cooked and drained
1 1/2 cups (6 oz) shredded cheese
1 can cream of en soup
3/4 cup milk
1 1/2 cups biscuit mix
2/3 cup milk
1 can Durkee onions

In greased 8 x 12 baking dish, combine first four ingredients and 1 cup cheese. Blend soup and 3/4 cup milk; pour over c***erole. Bake, covered, at 400 for 15 minutes. Meanwhile, combine biscuit mix, milk and 1/2 can onions; mix thoroughly. Drop by spoonfuls to form 6 biscuits, around edge of c***erole. Bake, uncovered, 15-20 minutes or until biscuits are golden brown. Top with remaining cheese and onions and bake 2-3 minutes, until onions are toasted.

Sounds delicious!! It's almost like homemade en pie without the crust and bacon & cheese added.
