Most of the cooking I do comes from what I ate and learned to love while growing up in New Orleans. I cook for my son's french class each year when they celebrate Mardi Gras. I came across an easy way to make one of our famous candies....Pralines. Hope somebody else will enjoy as well as we do.
2 cups of sugar
2 cups pecan halves
3/4 cup buttermilk
2 tablespoons butter
1/2 teaspoon salt
1 teaspoon baking soda
Combine first five ingredients in a 4 quart glass casserole dish. Microwave on high for 12 minutes, stirring every four minutes. Add baking soda, stirring well as it foams. Microwave on high for 1 more minute. Beat mixture until thickened and it losses it gloss (1 min)
(note: at this point I change it and add 1 teas of vanilla and beat for 1 more minute.)
Drop by teaspoonsful onto waxed paper and let stand till firm.
