No Cook Mint Patties

Here is a great recipe to do with the kids or by yourself if you need to work off some excess frustration!!

No-Cook Mint Patties

1/3 cup light corn syrup
1/4 cup butter, softenened (do not sub margarine here)
1 teaspoon peppermint extract
1/2 teaspoon salt
1 pound powdered sugar (about 4 3/4 cups sifted)
food coloring


Blend corn syrup, butter, extract and salt. Add sugar. Mix with your hands, kneading until smooth. Divide into thirds and add food coloring (I used green and red for Christmas time and blue for Hannakuh). Knead in the food coloring. This takes a lot of work and is great for working out frustration!

Roll into small balls and place on waxed paper. Flatten with fork. Let dry several hours. Makes 72 patties

mmmm sounds yummy, I'm going to keep this recipe. Does anyone have any tips on how to put chocolate on the outside??? Thank you lulu for a great recipe.
