Mardi Gras Kings Cake Cookies




The revelry and feasts of Mardi Gras are celebrated before the days of Lent, which begins this week. These tender spritz s are reminiscent of the colorful traditional Kings' Cake served during the festivities.


Ingredients 1 cup (2 sticks) butter, softened
1 package (3 ounces) cream cheese, softened
1 cup granulated sugar
1 egg yolk
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
2 1/2 cups all-purpose flour
1 1/2 cups confectioners' sugar
1-2 tablespoons water
yellow, green and purple colored sugars

Prep Time: 15 minutes
Baking Time: 10 minutes
Makes about 6 dozen s



Directions
1. Preheat oven to 325F. In a large bowl, using an electric mixer set on high speed, beat butter, cream cheese and granulated sugar until fluffy. Beat in egg yolk, vanilla and cinnamon. With mixer on low, add flour; beat until well mixed, 1-2 minutes. (The dough will be dry to the touch, not sticky.)

2. Place dough in a pastry bag fitted with a large star tip. Pipe rings of dough, about 2 1/2 inches in diameter, directly onto ungreased baking sheets.

3. Bake s until firm to the touch, but not browned, about 10 minutes. Transfer s to wire racks; completely.

4. In a small bowl, combine confectioners' sugar and 1 tablespoon water; add additional water, a little bit at a time, to create a thin glaze. Set s on wire rack over waxed paper. Spoon glaze over tops of s. Before glaze sets, spoon colored sugars onto s.
