For Those Ladies Who Have Never Baked a Scratch Cake

For the ladies who have never baked a scratch cake or are afraid of scratch baking, this is one of the most delicious, fool-proof recipes out there.

A Good Basic PoundCake Recipe

2 cups butter (1 Lb) softened
2 3/4 cups sugar
6 large eggs (room temp)
3 3/4 cups all-purpose flour
1/4 tsp salt
1/2 cup milk
1 1/2 tsp vanilla


Beat butter in LARGE bowl at med speed until creamy, gradually add sugar beating for 5- 7 mins. Fluffy, fluffy, fluffy! Since there is no leavening except the eggs, it's important that the sugar is creamed until very fluffy. Add eggs one at a time and beat until yellow disappears. Combine flour and salt, add to butter mixture alternately with milk, beginning and ending with flour. Don't overbeat when adding flour it will make your cake tough. Stir in vanilla and here you can add flavoring like lemon, lime or orange rind. I have one in the oven right now where I added 1/4 cup of orange marmalade. Just make sure the flavoring you add is not too watery. Pour into 10" tube or bundt pan. Bake at 325 1 hr and 15 - 20 mins or until tests for done with a hpick. I opt on the 15 minute side cuz I like a "sweet" streak in the middle of mine.

I have never baked a cake from scratch... This one sounds really good.. Maybe I will get brave this week-end and try it for Easter.. :D
