1 (4 serving size) package instant vanilla pudding mix
1 3/4 cups orange juice
1 (8 oz.) container vanilla or pineapple yogurt
3/4 cup coarsely crushed ginger snaps or chocolate wafer

1) Prepare pudding according to package instructions - except use orange juice in place of milk. Cover pudding with plastic wrap and chill thoroughly.
2) Fold yogurt into pudding. Divide one third pudding among 6 tall glasses. Sprinkle with half the crushed

crumb layers. Top with remaining pudding mixture.
3) Garnish, if desired with orange peels and fresh mint sprigs.
