Talking Linda's Version of Banana Pudding

Linda's Banana Pudding
This is my version of a classic banana pudding. Of course, I think it's the best!

1/2 cup granulated sugar
1/3 cup flour
1/4 tsp salt
2 cups mil, scalded
3 large egg yolks beaten, (eggs at room temp. Safe way to do that is to let them sit in warm water for a few minutes)
4 egg whites
1 teaspoon vanilla
1 cup whipping cream, whipped to stiff peaks
one box Nilla wafers
5 medium rip bananas, thinly sliced

In a heavy saucepan, combine sugar, flour and salt; mix well, then gradually stir whisk in scalded milk. Cook the mixture over moderate heat; stirring constantly, till slightly thickened. Very gradually stir about 1/4 cup hot mixture into the egg yolks, then add the yolk mixture to the saucepan, stirring constantly till the mixture is fully thickened and coats a spoon. Remove from heat and stir in vanilla. Let completely, then fold in the whipped cream.

In a 13 x 9 glass baking dish alternately layer the wafers and banana slices, pouring pudding over each layer, ending with vanilla wafers.

With a squeaky clean bowl and beaters, beat the egg whites to stiff peaks. Spread over pudding. Bake at 375 until golden. Refrigerate at least four hours or overnite.
