Apple-Nut Coffee Cake
1/2 cup shortening
1 cup granulated sugar
2 eggs
1 tsp. vanilla
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 cup sour cream
2 cups finely chopped apples
1/2 cup chopped nuts
1/2 cup packed brown sugar
1 tsp. ground cinnamon
2 Tbls. melted butter or margarine
In mixing bowl, cream together shortening and sugar.
Add eggs and vanilla; beat well. In a separate bowl,
thoroughly stir together flour, baking powder, soda and salt.
Add to sugar mixture, alternately with sour cream. Fold in
chopped apples.
Spread batter in a greased 13" x 9" baking pan. Combine nuts,
brown sugar and cinnamon; stir in melted butter. Sprinkle nut
mixture evenly over batter.
Bake at 350 degrees for 35 - 40 minutes.
