Honey Cake

This is called "Majestic & Moist Honey Cake", and it is! It has a very rich and dense flavor.

3 1/2 c. flour
1 Tbsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
4 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground allspice
1 c. vegetable oil
1 c. honey
1 1/2 c. sugar
1/2 c brown sugar
3 eggs
1 tsp. vanilla
1 c warm
1/2 c fresh orange juice
1/3 c rye or whiskey (or substitute orange juice or )
1/2 c slivered or sliced almonds (optional)

One 9 or 10" tube or bundt pan
One 9 x 13" baking pan
Two 9" squares or round layers
Two 9 x 5" loaf pans

Preheat oven to 350. Lightly grease pan(s).
In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, clovesand allspice. Make a well in the center, and add oil, honey, white and brown sugars, eggs, vanilla, , orange juice and rye or whiskey.

With an electric mixer on slow speed, stir together well to make a thick well-blended batter, making sure that no ingredients are stuck to the bottom.

Spoon batter into prepared pan(s). Sprinkle top of cake with almonds. Place cake pan(s) on 2 baking sheets (this will ensure the cakes bake properly with the bottom baking faster than the cake interior and top).

Bake until cake tests done, tube pan 60-70 minutes, loaf cakes about 45-55 mintus. For sheet style cakes, 40-45 minutes.

I am going to make this when I go visit my son or the next time he comes home for a visit. I have such fond memories of my grandmother's honey cake and this brought them all back...thanks for sharing!
