Post Pennsylvania Dutch funnel cakes

Pennsylvania Dutch Funnel Cakes
2 large eggs
1 cup milk
1 ¾ cups all-purpose flour
1 tbls. Sugar
1 tsp. Baking powder
¼ tsp. salt
Vegetable oil or shortening
Confectioners sugar
In medium-size bowl, Beat eggs until frothy. Gradually beat in milk. Stir in flour, sugar, baking powder and salt until smooth. In skillet, heat ¾ in oil or enough shortening to make ¾ in until hot enough to fry. Strain batter into small pitcher or large measuring cup. Hold finger over bottom opening of funnel. Pour batter into funnel. Using finger to control flow and starting at center of skillet pour batter into hot oil in a spiral until a 6-in. cake forms. Fry until golden. Remove cake with pancake turner. Brain on paper towels. Repeat for each cake. Sprinkle with confectioners’ sugar. Serve with jam or maple syrup. Makes 6
