Apple Praline Cheesecake

Apple Praline Cheesecake


1 cup graham cracker crumbs
2 tablespoons sugar
2 tablespoons butter -- melted

1/4 cup butter
1/2 cup light brown sugar
2 pounds red delicious apples -- peeled and sliced
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
Praline Topping
1 1/2 cups dark brown sugar
1/2 cup butter -- softened
1 cup pecan pieces
Apple Cheesecake
2 packages cream cheese -- 8 oz each
1/2 cup granulated sugar
3 large eggs
1 cup heavy whipping cream

Crust - Melt butter, stir in crumbs and sugar until blended, press into bottom of 9" springform pan. Set aside

Apple Mix - In large heavy pot, melt butter over low head, add brown sugar, apples, cinnamon, nutmeg, and allspice. Simmer over low heat until apples are soft, but still hold their shape. Set aside to to room temp.

Topping - In a small bowl mix all ingredients until blended. Set aside.

Cheesecake - In a large bowl with electric mixer, cream together the sugar and cream cheese until light and fluffy. Add eggs, one at a time until smooth. Add the cream and mix until thick and creamy. Gently fold in with spatula, the apple mixture. Pour into prepared pan. Sprinkle with Praline topping. Bake for 1 hour and 20 minutes or until set in a 350 oven. Allow to to room temp, remove pan sides and refrigerate at least 8 hours.
