Autumn Cheesecake

Autumn Cheesecake


1 cup graham cracker crumbs
1/2 cup pecans -- finely chopped
3 tablespoons sugar
1/2 teaspoon cinnamon
1/4 cup unsalted butter -- melted
2 8 ounce cream cheese -- at room temperature
1/2 cup sugar
2 eggs
1 teaspoon vanilla
4 cups apples -- thinly sliced
1/3 cup sugar
1 teaspoon cinnamon
1/4 cup pecans -- chopped

Preheat oven to 350. Combine cracker crumbs, 1/2 cup pecans, 3 tblsp sugar, 1/2 tsp cinnaon and melted butter. Press into bottom of 9" springform pan. Bake 10 mins.

Combine cream cheese and 1/2 cup sugar. Mix at medium speed until blended. Add eggs one at a time, mixing well after each addition. Blend in vanilla and pour into crust.

Toss apples with remaining sugar and cinnamon and arrange on top of cake. Sprinkle with remaining nuts. Bake 1 hour and 10 mins.
