9 eggs
3 c. milk
1 1/2 c. grated Cheddar cheese
1 1/2 tsp. dry mustard
9 slices white bread, crusts removed and cubed
1 1/2 tsp. salt
1 med. green pepper, chopped (optional)
2 (4 oz.) cans sliced mushrooms or fresh steamed
1/2 c. chopped green onion
1 1/2 c. cooked chopped ham
Beat eggs, add
ed sausage or ham. Add other ingredients. Pour into 9 x 13 Pyrex dish (3 quart). Cover with Saran wrap and refrigerate overnight. Let sit out one hour before baking. Bake at 350 degrees until puffed and lightly browned.

This is one of my favorites, and you can use sausage too, if you want. I have a great breakfast "pizza" recipe but I can't find it...I'll keep looking. I used to make things like this the nights before holidays, like Thanksgiving, X-Mas, New Years Day, etc. when I knew I wouldn't feel much like cooking the next
