I use these to pay my babysitter!
4 C. unbleached flour
1 1/3 C. sugar
2 T. baking powder
1 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. nutmeg
1 1/2 C. milk
1/2 C. canola or vegetable oil
2 eggs, beaten
2 C. chopped peaches, fresh or frozen
Preheat oven to 350F and grease or place baking cups in two 12-cup muffin tins.
In a large bowl, mix the dry ingredients. Make a well, and add the milk, oil, and eggs. Stir gently, just to moisten. Gently stir in peaches.
Fill the prepared tins 2/3 full and bake 25 minutes or until a

hpick comes out clean.
Cool muffins on racks, or put in a cloth lined basket if serving right away.
