Jam Tarts

Makes about one dozen - double it if you want

2 2/3 cups flour
1 cup butter, chilled
2 Tbls honey or sugar
1 egg yolk
1/2 cup ice water (or a bit less)
1 tsp grated lemon rind or extract
assorted jams and preserves

Using knives, cut together flour and butter until butter is small
marble size. Make a well, and add sugar or honey, egg yolk, water and lemon rind. Quickly combine all ingredients. Place dough on floured surface and knead lightly together for 5 minutes. Roll dough into a ball, and chill in the refrigerator for 1/2 hour.
Roll dough to about 1/4-inch thickness, and cut into 4-inch squares. Put a tablespoonful of jam in the center of each square, fold into a triangle and seal the edges. Place on oiled sheets and bake in preheated 400 degree oven for 10 minutes. Tarts will be golden brown when done.
Serve warm or ed.

You can also put the dough in muffin tins and then add the jam, so the result looks like mini pie.

Again, I should mention, my grandmother never measured so I had to guesstimate the amounts in order to write the recipe down so I could make these.
