Butter Tarts as per compltlyme's request

1/4 cup butter
1/2 cup brown sugar; packed
1/2 tsp vanilla
1 egg
1/2 cup corn syrup
1/2 cup raisins ( I leave these out cause I don't care for raisins)

12 Tart shells or use pie crust dough cut into circles and fit into muffin tins.

In bowl, cream together butter, sugar and vanilla. Beat in egg and corn syrup. Spoon raisins into tart shells; pour in the filling, two-thirds full. Bake in 375F oven for 15 to 18 minutes or until lightly browned.

NOTE: My grandmother never measured anything so I watched her closely and kind of estimated amounts, etc - cause with baking I need to know amounts!!! No guarantee they will be accurate but I've made these countless times with no problems over the years

Butter Tarts & Never Fail Pie Crust

2 1/2 cups flour
1/2 lb. shortening
Beat one egg in a cup and add 1 tbsp. of vinegar. Then fill half full with water. Add to flour and shortening. Mix well.
Roll out and make your tart forms for the butter tarts.

Butter Tarts
**********
2 cups brown sugar
2 tbsp. soft butter or margarine
2 eggs
1 tsp. corn starch
1/2 tsp. vanilla
Raisins (optional) I don't use them either.
Mix well all ingredients in a bowl . Fill tart crusts or tins and bake at 350 degrees about 15-20 minutes.
Makes about 18 tarts.

Eat and enjoy!

Hey IM13 I love these, even with the raisins! Did you know that these are considered Canadian in origin? Just like me! My mom used to make them, not often enough. When I saw this I realize, how much I miss her.:(

Yes I did realize that butter tarts were Canadian in origin, but tarts in general originated in Great Britain I believe. Regardless, they're tasty and easy to make, so thanks to our northern neighbors for sharing

dandylin, like you, I miss my mom more than words can say but everytime I cook a dish she used to make or repeat things she said, she lives on and I feel like she's along side me again
