Pepperoni Bread

12-14 Servings

1 loaf frozen bread dough, thawed

8 ounces pepperoni, chopped

8 ounces provolone cheese, chopped

1/4 cup chopped onion

Divide dough into 2 portions. Roll each portion into a circle on lightly floured surface. Sprinkle circles with pepperoni, cheese and onion. Roll to enclose filling. Tuck ends under. Place on a baking sheet. Let rise for 45 minutes. Bake at 350* for 30-40 minutes or until golden brown. Cool on wire rack.

I've made breads like this for years. Variations can include adding pizza or spaghetti sauce or making breads withsausage, peppers and onions, mushrooms, olives, etc. Just make sure to seal the loaf well to prevent leakage and make a few slits on the top to allow steam to escape during baking.

I also used to make pepperoni balls...time consuming but my kids loved them and they are huge hit at parties. Just use the frozen bread dough, thawed, of course. Tear pieces and wrap around a piece of pepperoni and a small square of either provolone or mozzarella cheese, shape into a ball, seal well and fry in about 2" of oil til puffed and brown (you can use a deep fryer if you have one...I prefer my elec. frying pan). Drain on paper toweling.
