Lemonade Muffins
Preheat oven to 400 F
Makes: 1 dozen
Mix together:
- 1 3/4 cups sifted flour
- 1/2 cup sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
Make a well in the center of these dry ingredients, into which put:
- 1 egg, well beaten
- 1 6-oz. can frozen lemonade, thawed (reserving a small amount)
- 1/4 cup milk
- 2 tablespoons cooking oil
Stir until thoroughly moistened, then gently add:
- 1/2 cup chopped walnuts
Bake in greased muffin tins about 20 minutes, remove from oven. Brush tops with (or invert muffins and dip tops into) remaining lemonade. Sprinkle with sugar.
