Combine in a bowl and mix well:
- 1 egg, beaten
- 1/4 cup melted shortening or cooking oil
- 1/4 cup milk
- 1 cup mashed ripe bananas (2 to 3 bananas)
- 1 teaspoon vanilla
Add dry ingredients and then:
- 1 1/2 cups corn flakes crushed to make
- 1/2 cup crumbs
- 1/3 cup chopped pecans or walnuts
Add the dry ingredients and stir just enough to moisten completely. Spoon into greased muffin cups and bake about 18 to 20 minutes, until lightly browned.
