Lemon Bread

Makes 12 servings

1 large lemon
1-1/2 cups flour
1 tsp baking powder
3/4 tsp salt
1/2 cup vegetable oil
1 cup plus 2 Tbls sugar
2 large eggs
1/2 cup milk
1/2 cup chopped walnuts

1) Preheat oven to 350 F. Grease three (5-3/4" x 3-1/4") metal
mini loaf pans

2) From lemon, grate 1 Tbls peel and squeeze 3Tbls juice. Mix
flour, baking powder and salt.

3) In bowl, with mixer on high speed, beat oil and 1 cup sugar for
about 2 minutes or until well blended. Beat in eggs and lemon peel.
At low speed, beat in flour mixture, until combined. Stir in nuts.

4) Spoon batter into loaf pans. Bake 45 - 50 minutes.

5) In cup, mix lemon juice and the remaining 2 Tbls sugar.
With skewer or drinking straw, poke holes all over top of
loaves; brush with lemon/sugar mixture. Cool in pans on wire
rack for 10 minutes. Remove from pans and completely.

I know.... I went into the kitchen recipe printed and ready to start. I looked at the time and thought...NOT. Then upon thinking on it more I decided that I am stronger than lemon cake!!! Really I am!!! I figure if I repeat this to myself all night by tomorrow I won't want it anymore. I will save it for the holiday time. Then there are so many people around I will be lucky if I get a taste!

Your willpower deserves praise compltlyme

I bet there's ways to make this lower in fat and calories though, like using applesauce or strained prunes instead of the oil.

I think I will wait...something about replacing oil with strained prunes that I think may take away from the lemon....Yep I do think I'll wait! But thanks for that!
