Mango Bread
Mango Bread
2 c. flour
1 1/2 c. sugar
1/2 tsp. salt
2 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. ginger
3/4 c. oil
3 eggs, beaten
1 tsp. vanilla
2 c. fresh ripe mango, peeled and diced
3/4 c. raisins
3/4 c. macadamia nuts, chopped
1/2 c. grated coconut
Spray 2 loaf pans with non stick spray. Dust with flower and set aside. Combine flour, sugar, salt, baking soda, baking powder, cinnamon and ginger in a large bowl. Combine oil, eggs and vanilla in a medium bowl, mix well. Add to flour bowl and mix again. Fold in mango, raisins, nuts and coconut. Pour batter into loaf pans. Bake in a 350 degree oven for 45-55 minutes until done.
