Dijon Ham Muffins

Dijon Ham Muffins


1 2/3 cups all-purpose flour
1/3 cup cornmeal
1/4 cup sugar
2 teaspoons baking powder
2 teaspoons ground mustard
1/2 teaspoon salt
1/2 teaspoon baking soda
1/8 teaspoon ground cloves
2 large eggs
1 cup buttermilk
1/3 cup vegetable oil
3 tablespoons Dijon mustard
1 cup finely chopped fully cooked ham

In bowl combine first 8 ingedients. Combine the eggs, buttermilk, oil and mustard; stir into dry ingredients just until moistened. Fold in ham. Fill paperlined muffin cups 3/4 full. Bake at 37 for 20-25 minutes. Wait 5 minutes before removing from pan.

Those sound delicious! I'm gonna keep it for when I ---someday----get to eat normal food again! (Typed as I sit eating yet another bowl of en noodle soup......:( )
