Luscious Legumes

1 cup cooked lima beans, split peas or lentils (green or brown)
2 tbs. chopped green pepper
1 whole tomato, chopped
2 tbs. water or unsalted vegetable broth

Soak lentils or legumes overnight. Drain. Add fresh water to cover. Bring them to a slow boil. Reduce heat and simmer until tender (lima beans 1/2 hour; lentils 1 1/2 hours). Drain and put through a blender. Whip with a spoon or whisk over heat. Blend tomato and green pepper then add water/broth. If you want a thinner mixture, add more water or broth.
